Bilona Ghee Process Explained

bilona ghee process

Ever wondered how pure A2 Sahiwal cow ghee is made the traditional way? The answer lies in the age-old bilona process — a Vedic method that not only preserves the nutrition of the milk but also enhances the taste, aroma, and health benefits of the ghee.

What is the Bilona Method?

The bilona method is an ancient Indian technique of preparing ghee by hand-churning curd into butter and then slowly heating it to extract ghee. Unlike commercial ghee, bilona ghee retains maximum nutrients, making it ideal for all age groups — from kids to elders.

At Apna Rasoi, we follow this sacred process exactly the way our ancestors did, using wooden churners (mathani) and firewood to simmer butter. The result? Authentic A2 desi ghee with unmatched purity and benefits.

The 4-Step Bilona Ghee Process at Apna Rasoi

Step 1: Boiling Fresh A2 Sahiwal Cow Milk

We begin with fresh A2 milk from our grass-fed Sahiwal cows. This milk is boiled to remove impurities and prepare it for curdling. No additives, no shortcuts — just pure, fresh milk from India’s finest native breed.

Step 2: Natural Overnight Curdling

The boiled milk is then set into curd using a natural starter. We allow it to ferment overnight, without using any synthetic agents. This step is crucial because curd made from A2 milk has a healthy probiotic profile that supports digestion and gut health.

Step 3: Hand Churning (Bilona) into Makkhan

Once the curd is ready, it is churned manually using a wooden bilona — a traditional churner. This process separates white butter (makkhan) from buttermilk. Churning by hand ensures no loss of nutrition, unlike machine-processing that generates heat and damages nutrients.

Step 4: Slow Heating to Extract Ghee

The final step is slow-heating the butter over a low flame. This allows the butter to clarify gently into golden aromatic ghee. The slow cooking develops its rich, nutty flavor and preserves its therapeutic properties like CLA, vitamins A, D, E, and K, and butyric acid.

Why is Bilona Ghee Better?

  1. Preserves Nutrients: Slow churning and heating keep natural enzymes, vitamins, and antioxidants intact.
  2. No Chemicals: Our process is 100% natural — no preservatives, emulsifiers, or industrial shortcuts.
  3. Better Taste & Aroma: You’ll notice a distinct grainy texture, nutty aroma, and authentic flavor in every spoon.
  4. Ayurvedic-Approved: Bilona ghee is highly recommended in Ayurvedic medicine for balancing vata, pitta, and kapha.
  5. Good for All Ages: Safe for kids, seniors, and pregnant women — thanks to its digestibility and immune-boosting effects.
