A2 Bilona Sahiwal Cow Ghee

Ingredients:

  • 1 kg fresh red carrots (gajar), peeled and grated
  • ½ cup Sahiwal cow ghee (adjust to your preference, but don’t be shy!)
  • 1 litre full-fat milk
  • 1 cup sugar (or to taste, depending on carrot sweetness)
  • ½ cup khoya/mawa (optional, but highly recommended for richer taste)
  • ½ teaspoon green cardamom powder (elaichi powder)
  • A handful of mixed nuts (almonds, cashews, pistachios), roughly chopped for garnish
  • A few strands of saffron (optional, soaked in a tablespoon of warm milk)

Instructions:

1. Prepare the Carrots: Start by thoroughly washing, peeling, and grating your red carrots. Ensure they are finely grated for a smooth halwa texture.

2. Sauté in Sahiwal Cow Ghee: Heat a large, heavy-bottomed pan or kadai over medium heat. Add the generous amount of Sahiwal cow ghee. Once the ghee is melted and fragrant, add the grated carrots. Sauté the carrots for about 10-15 minutes, stirring continuously, until their raw smell disappears and they start to look slightly softened and darker in color. This step is crucial as it locks in the flavor and gives the halwa its characteristic aroma.

3. Simmer in Milk: Pour in the full-fat milk. Bring the mixture to a boil, then reduce the heat to low. Let it simmer gently, stirring occasionally, until the milk is almost completely absorbed by the carrots. This process can take anywhere from 45 minutes to an hour, or even longer. Patience is key here; the slow cooking in milk is what makes the halwa creamy and rich.

4. Add Sugar and Khoya: Once the milk has been mostly absorbed and evaporated, add the sugar. Continue to cook, stirring constantly, until the sugar completely dissolves and the mixture thickens again. The halwa will release some moisture after adding sugar, which needs to be cooked off. Now, crumble in the khoya (if using). Khoya adds an incredible richness and creamy texture to the halwa. Mix well until it’s fully incorporated.

5. The Final Stir with Sahiwal Cow Ghee: At this stage, you’ll notice the halwa starting to leave the sides of the pan. This is when you can add another tablespoon or two of Sahiwal cow ghee if you desire an even richer flavor and sheen. Stir in the green cardamom powder. If using saffron, add the soaked saffron milk now. Continue to cook for another 5-7 minutes, stirring vigorously, until the halwa reaches a thick, fudgy consistency and no excess moisture remains. The ghee will start to separate from the halwa, indicating it’s perfectly cooked.

6. Garnish and Serve: Transfer the Gajar ka Halwa to a serving bowl. Garnish generously with the chopped mixed nuts. For an extra touch of elegance, you can toast the nuts lightly in a teaspoon of Sahiwal cow ghee before garnishing.
