The boiled milk is then set into curd using a natural starter. We allow it to ferment overnight, without using any synthetic agents. This step is crucial because curd made from A2 milk has a healthy probiotic profile that supports digestion and gut health.
Once the curd is ready, it is churned manually using a wooden bilona — a traditional churner. This process separates white butter (makkhan) from buttermilk. Churning by hand ensures no loss of nutrition, unlike machine-processing that generates heat and damages nutrients.
